Enchilada Casserole
This easy to make casserole will please lovers of Mexican food.
  • 3 Tbs vegetable oil45 ml
  • 8 corn tortillas
  • 1lb ground beef450 g
  • 1 onionchopped
  • 2cloves garlicfinely chopped
  • 1 16-oz can refried beans450 g
  • 1/4cup prepared taco sauce60 ml
  • 1/4cup chopped green olives60 ml
  • 1 10-oz enchilada sauce280 ml
  • 6oz shredded cheddar cheese170 g
  1. Heat the oil in a large skillet and dip the tortillas in the oil on both sides to soften them.
  2. Set aside. In the same skillet, saute the beef, onion, and garlic until the meat is browned.
  3. Drain off any excess fat and add the refried beans, taco sauce, and olives, stirring to combine.
  4. Divide the meat mixture between the tortillas and roll up.
  5. Place half the enchilada sauce in a 12×8-inch (30×20 cm) baking dish, add the enchiladas seam side down, and pour the remaining enchilada sauce over them.
  6. Cover with aluminum foil and bake in a preheated 350F (180C) oven for 45 minutes.
  7. Remove the foil, sprinkle with the cheese, and bake uncovered until the cheese is melted, about 5 minutes.
  8. Serves 4 to 6.
