Wine-Baked Apples

Ingredients
  • 4-6 large baking apples such as Golden Delicious or Granny Smith
  • 1/2 cup crushed amaretti biscotti, or other crisp cookies, 125 ml
  • 1/2 cup currants raisins, or dried cranberries, 125 ml
  • 3 Tbs brown sugar 45 ml
  • 1 Tbs lemon juice 15 ml
  • 1 tsp ground cinnamon 5 ml
  • 1-2 cups white wine such as chenin blanc 250-500 ml
  • Heavy cream or half-and-half for garnish

  • 4-6 large baking apples such as Golden Delicious or Granny Smith
  • 1/2 cup crushed amaretti biscotti, or other crisp cookies, 125 ml
  • 1/2 cup currants raisins, or dried cranberries, 125 ml

  • 1 Tbs lemon juice 15 ml
  • 1 tsp ground cinnamon 5 ml
  • 1-2 cups white wine such as chenin blanc 250-500 ml

Instructions
  1. Cut a cone-shaped hole in the top of the apples, removing the core without cutting through to the bottom of the apples.
  2. Place the apples in a baking dish large enough to hold them without touching.
  3. Mix the crushed amaretti, currants, brown, sugar, lemon juice, and cinnamon in a small bowl and fill the apples with the mixture.
  4. Pour the wine over the apples and bake covered in a preheated 350F (180C) oven for 30 minutes.
  5. Remove the cover and continue cooking, basting occasionally with the wine, until the apples are tender when pierced with a toothpick, about 30 minutes.
  6. Serve warm, chilled, or at room temperature with a pitcher of heavy cream.
  7. Serves 4 to 6.
